I wish I wrote what I wanted to write in my previous post. I wanted to
say that poor quality food is what saves maybe millions and millions
from starvation... out of those who already starve every day. It is not
a mistake to eat whatever can be digestible when you don't have
anything.

If we told you that smoking and drinking is bad for you, would you
care what we say? Of course not. You do what you like as long as
the mind is stronger than the body, the body can endure almost
everything. If you think eating sweets all day you will get into trouble,
exactly that will happen.

We can't cross invisible bridges. We can only care for you and help
you to be strong when you need it most.

So we continue this thread with not many expectations from this dough tomorrow. Yes, I come
with both feet back to planet Earth. The potato result was good, but a bit bready, not so perfect
as the previous try, which was perfect for what I'm working with.

This is exactly 80% hydration. Hard to get the water absorbed by this flour combination already.
It's almost 37% Whole Wheat, but as I get close to 80% I seem to lose control of it. The red one
and the white one had 77.7%, but its structure was almost perfect. Very smooth, like silk, before
resting it in the fridge for 24 hours. For example the potato one had 78%, but lower protein, so
I over mixed it by hand and it didn't melt in your mouth as before. It was very close to every
day pretty good open bread. Open meaning holes.

It will cook well and probably taste great, but how will it feel like in my mouth? :lol:
Tomorrow one will be topped with eggplant, tomatoes and spinach. The other with onions.
What is the cost of these two pizzas, minus gas for the oven? Almost 2 € :sylvester:
Feeds 3 people. Add some lemonades and you have 3€, meaning 1€ per person :cooking:

Not smooth, not satisfied, but it smells great already...

Just remembered... I threw away a good dough that looked like this :rofl:
