I'm not expert about flour, Flo, anyway in a town 5 km from mine there's a company that makes flour for pizza too. I saw on internet that in USA and in other countries use this flour but I'm not sure that you know it:

Yes, I know about it, Dani Thanks.
I would prefer to use something that's 100% bio and stone milled... an artizan's
family owned flour making business like Mulino Marino.
