More delicious stuff from this year's summer 

Raspberry kompot. I never heard of it, just tried it last year with only 2 jars. It's a perfect drink 

 

More perfect drinks... here come the apricot nectar (apricots bought from the market because our main apricot tree has had enough  )

 

Aaaand pear nectar made today from 3 types of pears. This one has just 100g of sugar per 3-4 kg of pears. It really shouldn't need sugar at all. The different flavors combine perfectly and it's so sweet and thick it needs extra water when drinking. Super simple to make, just clean the fruit, remove the skin and core, then cover with water and juice of a lemon. Boil for 20 minutes and blitz. 

 

 

 

Shake and bake! 

Some wonderful apples that usually last through winter. I still have plenty to harvest.  

 

You can bake a cake with caramel, apples, cinnamon and butter, then pour a batter made from 4 eggs. Whisk the egg whites first, then whisk in the sugar 2 Tbsp per egg, the 4 yolks one by one, 2 more Tbsp per egg of flour, a tbsp of baking powder and that's about it. It's delicious with vanilla ice cream 

 

 

Sexy snails today   They're a different dimension from the bakery ones 

Slow proof for 17 days hours, trying to keep the flavors balanced and simple. This is a walnut and cocoa variation. The other one I like is with vanilla cream and raisins soaked in tea
