Ricotta Gnocchi

120g Ricotta cheese
105g 00 Flour
~40g Egg yolks(2)
15g Dry cheese(or Parmigiano)
pinch Salt
pinch Pepper
pinch Nutmeg

300g Tomatoes a la Passata(you really need about 200g)
15g Olive oil
2 Cloves of garlic

More cheese on top!

Really enjoyed this simple dish, even if I missed some key ingredients like fresh basil and parmigiano. Adapted with what I had and I suggest not to use passata as I did. This must be a summer dish with fresh tomatoes or sliced ones in a can. I've made half the quantity of gnocchi (described in the video below) and almost the tomato sauce necessary for the full recipe. Simple recipe, done in 30 minutes if you have everything ready.

When my grandmother made gnocchi, there was enough for a regiment :D

I don't have much to cover from my family tradition, but it would be fantastic to get some old Italian recipes here, the ones that remind you of your childhood :heart:

Probably I'm the first one making gnocchi in my entire genealogical tree :lol:
... the same goes with croissants. I know my aunt was making Orangettes in Greece before me, but I didn't know about it when I started 8) She used to be a Chef at a 5 star restaurant there... she was responsible for the "cold food" like salads.

I can almost hear Nik walking in here with his complex recipes :rofl:

Sticking to the "first course" section, I'd say for us it was pasta (al ragù, al pesto, butter and sage, alla carbonara, amatriciana, al forno), risotto (with mushrooms, with cheese, alla milanese, al radicchio rosso).
Gnocchi usually with ragù or gorgonzola cheese or butter and sage.
Different kinds of dumplings like ravioli, agnolotti and tortellini were quite popular.
My grandma also made gnocchi alla romana.

The classic "first course" I'm used to refers to soups. The main course is usually anything not soupy, so even pasta with cheese. Anything else that involves dough(excluding pizza) is usually a desert, never with meat, sometimes it's with salty cheese. We never had food shortage, but we also eat very simple, cheap and don't throw away food, unless it has gone bad for some reason.

I don't understand why I often hear lately that Romanians are throwing away hundreds of kg of food into the garbage. Knowing the communist past and its tendencies, you just don't throw away food. This means that the 15% of people owning more than 700 Euros, just stuff their supermarket carts with things they don't consume anyway... or they are like my dad, buying to forget about it until it expires.
